The bird's eye chili is small but packs quite a lot of heat. At one time it was even listed as the hottest chili in the Guinness Book of World Records but other hotter varieties of chili have since been identified. It measures around 50,000-100,000 Scoville units which is at the lower end of the range for the hotter Habanero chili.
Storage
» Store immediately covered in a sealed original container in the warmest part of the walk-in cooler. Chilling injury (water-soaked spots, pitting, and accelerated decay) can occur if held for more than 3 days, un-protected, in a walk-in cooler.
» Un-protected chilies are extremely susceptible to dehydration (shrivel and pitting).

Handling
» Follow good rotation practices, first shipments received should be used first.
» Birds eye chillis have an expected shelf life of 4-5 days. Plan to rotate frequently to maintain quality.
» Be sure to wear gloves in handling birds eye chillis
» Never touch your eyes after handling or prepping birds eye chilies.
» Never place the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prepare as needed. Try not to use product from the previous day.
» Removing the seeds will reduce the heat of the chillis and alter the expected flavor.
» Birds eye chillis are field grown and packed and need to be rinsed prior to preparation
» Full, clean and sanitize cutting utensils after prep.
» Wash your hand thoroughly after prepping birds eye chilies.
» Store prepared product in the refridgerator.
