Brussels Sprouts

The Brussels sprout is a group of wild cabbage cultivated for its small, leafy green buds, which are typically 2.5–4 cm (0.98–1.6 in) in diameter and visually resemble miniature cabbages. Choose brussel sprouts that are fresh in appearance with good green colour. Texture should be firm, leaves compact, and butt ends clean.

» Brussels sprouts should be stored between 0° - 2° C (32° - 36° F)

Handling
» Follow good rotation practices, first shipments received should be used first.
»Keep handling to a minimum to avoid bruising and decay
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
» Always limit the time the product is out of refrigeration. Exposure to kitchen temperatures for prolong periods of time will cause the Broccolini to lose its crispness and color.

Preparation
» Prep fresh daily as needed. Try not to use prepared product from the previous day.
» Brussels sprouts need to be washed in a sanitary sink with a fresh cold water rinse. Drain well.
