Cauliflower is composed of tiny florets on clusters (aka “curds”) of stalks. This member of the cabbage family should be tight and compact with creamy white curds and the neatly trimmed leaves shall be bright green. Cauliflower is packed with a protective plastic cellophane wrapper over the entire head. The "rainbow cauliflowers" are said to taste the same as the normal varieties, but add a splash of colour to different dishes.
