Cilantro (Corriander)

Cilantro is the leaf of the young coriander plant, Coriandrum sativum, an herb in the parsley family, similar to anise. Cilantro, also called Chinese parsley, has a leaf shape and color similar to Italian parsley. The 3 part leaf will range in size from ½” to 1 ¼” with a slender stem. Cilantro can also be identified by its distinctive, pungent flavor and aroma.
Storage
» Store immediately in the coldest part of the walk-in cooler. Heat exposure (above 40 degrees) will cause a rapid decline in quality.
» Store in the original carton away from drafts from the cooler fan. Cilantro is extremely susceptible to dehydration damage from direct exposure to cooler fans.
» Store away from ethylene producing fruits. Ethylene can cause cilantro to yellow and brown and shorten the shelf life.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Do not soak. Excessive moisture will cause the cilantro to darken, lose flavor and become limp.ecay.

Preparation
»Prepare as needed. Try not to use product from the previous day. Keep cilantro under refrigeration for as long as possible.
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
» Wash thoroughly, field packed product will have sand & dirt.
» Remove or cut away yellow, brown and water soaked leaves.
» Store prepared product in refridgerator.
