Clementines

A clementine is a variety of mandarin orange. The exterior is a deep orange colour with a smooth, glossy appearance. Clementines separate easily into seven to fourteen fat-juicy segments. They are very easy to peel, like a tangerine, but are almost always seedless. For this reason they are known simply as seedless tangerines. They are typically juicy and sweet, with less acid than oranges
Storage
» Store immediately in the warmest part of the walk-in cooler.
» Store in the original sealed carton and off of the floor to help prevent dampening of boxes from the condensation/ moisture in the room.
» Store clementines away from foods that readily absorb odors.
» To prevent the spread of mold, remove moldy fruit immediately from the case.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Do not drop, clementines will bruise easily.
» Expect to rotate clementines within 5 days of delivery.
» Never “refill” or reuse citrus cartons.
» Store prepped product immediately into refrigeration (covered) upon completion of the prep to minimize browning and dehydration.
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prep fresh daily as needed. Try not to use prepped product from the previous day.
» Wash thoroughly in whole form before cutting.
» Always use clean & sanitized cutting equipment.
» For maximum juice yield, allow fruit to reach room temperature before squeezing.
