Baby corn or candle corn is a cereal grain taken from corn (maize) harvested early while the ears are very small and immature. Baby corn ears are hand-picked from the branches as soon as the corn silks emerge from the ear tips, or a few days after. Corn generally matures very quickly, so the harvest of baby corn must be timed carefully to avoid ending up with more mature corn ears.
Storage
» Store immediately in the coldest part of the walk-in cooler. Sweet corn will lose it’s sweetness with exposure to kitchen heat.
» Do not stack heavy objects on top of corn.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Baby corn has an optimum shelf life of 4-5 days.
» Avoid placing the raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
» Always limit the time the product is out of refrigeration.

Preparation
» Prepare as needed. Try not to use product from the previous day. Leave un-prepped product in the husk.
» Store prepared product in refridgerator.
