Cranberries
Cranberries are small, hard, tart, oval, red berries. They are a relative of the blueberry .Cranberries are normally considered too sharp to be eaten plain and raw, as they are not only sour but bitter as well.Cranberries are harvested in the fall when the fruit takes on its distinctive deep red color. This is usually in September through the first part of November.
Storage
» Cranberries should be stored in the refrigerator.
» Do not stack product on top of the cases or cause the cranberries to be crushed.
» Remove any cranberries with decay, damage or that begin to mold immediately.
Handling
» Follow good rotation practices, first shipments received should be used first.
» Fresh cranberries have an expected shelf life of about 3 days. Plan to rotate frequently to maintain maximum quality.
» Avoid placing cranberries on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
Preparation
» Prep fresh daily as needed. Wash only immediately before use
» Always limit the time that the product is out of refrigeration.
