Currant is the shrub of the genus Ribes of the gooseberry family (Grossulariaceae), the piquant, juicy berries of which are used chiefly in jams and jellies. There are at least 100 species, natives of temperate climates of the Northern Hemisphere and of western South America. The Rocky Mountains in North America are especially rich in species.
Storage
» Currant should be stored in the refrigerator in a single layer on a shallow tray covered with a paper towel. They should be washed just prior to being used.
» Do not stack product on top of the cases or cause the berries to be crushed.
» Remove any berries with decay, damage or that begin to mold immediately.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Currant has an expected shelf life of about 3 days. Plan to rotate frequently to maintain maximum quality.
» Avoid placing berries on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
» Always limit the time the product is out of refrigeration.

» Prep fresh daily as needed. Wash only immediately before use
