Edible flowers are flowers that can be eaten. Edible flowers may be preserved for future use using techniques such as drying, freezing or steeping in oil. They can be used in drinks, jellies, salads, soups, syrups and main dishes. Flower-flavoured oils and vinegars are made by steeping edible flower petals in these liquids. Candied flowers are crystallized using egg white and sugar (as a preservative).
Stoage
» Store immediately, in the coldest part of the walk-in cooler. Edible flowers are very susceptible to damage from the heat of the kitchen
» Store in a sealed container away from drafts from the cooler fan

Handling
» Follow good rotation practices, first shipments received should be used first.
» Rotate frequently to maintain optimum quality.


» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
» Always limit the time the product is out of refrigeration. Exposure to kitchen temperatures for prolong periods of time will cause the Broccolini to lose its crispness and color.

» Rinse thoroughly before preparation.
