Lemons are identified by their smooth, bright yellow skin and elongated shape. The fruit is used for culinary and nonculinary purposes throughout the world – primarily for its juice, though the pulp and rind (zest) are also used, mainly in cooking and baking.
Storage
» Store immediately in the warmest part, of the walk-in cooler.
» Store in the original sealed carton, off of the floor to help prevent dampening of boxes from condensation of moisture in the room.
» Store lemons away from foods with strong odors.
» To prevent the spread of mold, remove moldy fruit immediately from the case.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Do not drop, lemons will bruise easily.
» Expect to rotate lemons within 5 days of delivery.
» Never “refill” or reuse citrus cartons.
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prep fresh daily as needed.
» Wash thoroughly in whole form before cutting.
» Always use clean and sanitized cutting equipment.
» For maximum juice yield, allow fruit to reach room temperature before squeezing.
» Store prepped product immediately into refrigeration (covered) upon completion of the prep to minimize browning and dehydration.
