Storage
» Store in the coldest area of the walk-in refrigerator. Kitchen heat can cause yellowing and wilting.
» Store in the original container and with original plastic sleeves (if present) to protect. Do not stack heavy objects on the tops of cases to limit the potential of crushing the product.
» Keep away from drafts from the cooler fan. Mizuna lettuce is highly susceptible to dehydration.
» Mizuna lettuce is extremely susceptible to ethylene damage. Store away from ethylene producing fruits, such as avocados, apples and melons, where possible. Ethylene damage can appear as brown russet spots.
Handling
» Follow good rotation practices, first shipments received should be used first.
» Expected shelf life of mizuna lettuce is 4-5 days.
» Never place the case or raw product on non-sanitized kitchen counter tops to prevent the potential for cross contamination.
Preparation
» Prepare as needed. Try not to use product from the previous day.
» Rinse thoroughly prior to preparation. Mizuna lettuce is field-packed.
» Store prepared product in refridgerator.
