The word “lime” is used to refer to a large group of green citrus fruits with a tart, intense flavor. Limes are popular in many cuisines, such as Thai and Mexican food. They are also used to make mixed drinks, since the tart flavor often interacts well with alcohol. Limes are identified by their thin, smooth, brilliant green skin and elongated to round shape. The pale green flesh will have few, if any seeds.
Storage
» Store immediately in the warmest part, of the walk-in cooler.
» Store in the original sealed carton, off of the floor to help prevent dampening of boxes from condensation of moisture in the room.
» Store limes away from foods with strong odors.
» To prevent the spread of mold, remove moldy fruit immediately from the case.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Do not drop, limes will bruise easily.
» Expect to rotate limes within 5 days of delivery.
» Never “refill” or reuse citrus cartons.
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prep fresh daily as needed.
» Wash thoroughly in whole form before cutting.
» Always use clean and sanitized cutting equipment.
» For maximum juice yield, allow fruit to reach room temperature before squeezing.
» Store prepped product immediately into refrigeration (covered) upon completion of the prep to minimize browning and dehydration.
