Loquat fruits, growing in clusters, are oval, rounded or pear-shaped, 3–5 cm long, with a smooth or downy, yellow or orange, sometimes red-blushed skin. The succulent, tangy flesh is white, yellow or orange and sweet to subacid or acid, depending on the cultivar. Each fruit contains five ovules, of which one to five mature into large brown seeds. The skin, though thin, can be peeled off manually if the fruit is ripe.
Storage
» Store immediately in the warmest part, of the walk-in cooler.
» Store in the original sealed carton and off of the floor to help prevent dampening of boxes from the condensation of moisture in the room.
» Store kumquats away from foods that readily absorb odors.
» To prevent the spread of mold, remove moldy fruit immediately from the case.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Do not drop, loquats will bruise easily.
» Expect to rotate loquats within 5 days of delivery.
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prepare as needed. Try not to use product from the previous day.
» Wash thoroughly in whole form before cutting.
» Always use clean and sanitized cutting equipment.
» Store prepared product in the refridgerator to reduce browning.
