Lotus root is consumed mostly in Asian countries and is known as kamal kari in Hindi and thamarai kizhangu in Tamil. The air channels which form a lace-like pattern are the only attractive feature of the bulb. Its flavour is mildly sweet and its texture, crunchy. It remains by far the most widely-used part of the plant for culinary purposes.


Storage

» Store in the coldest area of the cooler, preferably in a dark area with good humidity.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Shelf life should range from 5 – 7 days
» Handle with care, do not drop product
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prep fresh daily as needed. Try not to carry over prepped product from the previous day
» Full, clean and sanitize cutting utensils after prep.
» Store prepared product in the refridgerator.
