Mango

Mangos are a round to oval fruit and are similar to a pear in size. The juicy yellow-orange flesh surrounds a flat seed. Its thin skin turns from green to yellow-green or yellow with red blush as the fruit ripens. Ripe mangoes yield to gentle pressure and emit a fruity aroma.
Storage
» Ripe fruit should be stored immediately in the coldest part, of the walk-in cooler. Kitchen heat will continue the ripening process and start decay.
» Store in the original carton, away from drafts from the cooler fan. Mangos are susceptible to dehydration.
» Do not stack heavy objects on top of the case. This could cause crushing damage.
» Under-ripe fruit may be stored at 68-74 degrees to ripen. If a proper area is not available, case may be stored in a plastic bag in the warmest part of the cooler.
» Mangos produce low levels of ethylene, but are also very sensitive to ethylene exposure.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Handle carefully, do not drop. Ripe mangoes will bruise easily.
» Expect to rotate mangos within 4 days of delivery.
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prepare as needed. Try not to use product from the previous day.
» Use the entire piece of fruit in prep.
» Store prepared product in the refridgerator.
