The 2 principal varieties are Valencia’s, juicy, sweet with few seeds, are available from Early March through Late October and Navels, juicy, sweet and nearly seedless, which season runs from November through March. Navels have the distinctive button navel opposite the stem end.
Storage
» Store immediately in the warmest part, of the walk-in cooler.
» Store in the original sealed carton and off of the floor to help prevent dampening of boxes from the condensation of moisture in the room.
» Store oranges away from foods that readily absorb odors.
» To prevent the spread of mold, remove moldy fruit immediately from the case.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Do not drop, oranges will bruise easily.
» Expect to rotate oranges within 5 days of delivery.
» Never “refill” or reuse citrus cartons.
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prepare as needed. Try not to use product from the previous day.
» Wash thoroughly in whole form before cutting.
» Always use clean and sanitized cutting equipment.
» For maximum juice yield, allow fruit to reach room temperature before squeezing.
» Store prepared product in the refridgerator.
