Curly Parsley
Curly parsley has a frilly, curled, leaf shape and a dark green color. The 3 part leaf shall range in size from ½” to 1 ¼” with a slender stem. Curly parsley can also be identified by its distinctive, pungent flavor and aroma. Parsley should have a high leaf to stem ratio. In the summer months, the stems will be thicker and have a lower stem to leaf ratio.
Storage
» Store immediately in the coldest part of the walk-in refrigerator. Heat exposure (above 40 degrees) will cause a rapid decline in quality.
» Store in the original carton away from drafts from the cooler fan. Curly parsley is extremely susceptible to dehydration damage from direct exposure to cooler fans.
» Store away from ethylene producing fruits such as apples, avocados and melons. Ethylene can cause curly parsley become yellow and brown, and shorten the shelf life.
Handling
» Practice first in, first out- first shipments received should be used first.
» Do not soak for extended periods of time. Excessive moisture can cause the curly parsley to darken, lose flavor and become limp.
» Limit the time the product is out of refrigeration, do not allow the unused product to reach room temperature.
» Never place the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
Preparation
»Prepare as needed. Try not to use product from the previous day.
» Rinse thoroughly before preparation.
» Remove or cut away yellow, brown and water soaked leaves. Immediately store prepped product into refrigeration
