Passion Fruit

The nearly round or ovoid fruit, 4-7.5 cm wide, has a tough rind, smooth, waxy, ranging in hue from dark-purple with faint, fine white specks, to light-yellow or pumpkin-color. Within is a cavity more or less filled with an aromatic mass of double-walled, membranous sacs filled with orange-colored, pulpy juice and as many as 250 small, hard, dark-brown or black, pitted seeds. The flavor is appealing, musky, guava-like, subacid to acid.
Storage
» Ripe fruit should be stored immediately in the coldest part, of the walk-in cooler. Kitchen heat will continue the ripening process and start decay.
» Store in the original carton, away from drafts from the cooler fan. Passion fruits are susceptible to dehydration.
» Under-ripe fruit may be stored at 68-74 degrees to ripen. If a proper area is not available, case may be stored in a plastic bag in the warmest part of the cooler.
Handling
» Follow good rotation practices, first shipments received should be used first.
» Expect to rotate passion fruits within 4 days of delivery.
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
Preparation
» Prepare as needed. Try not to use product from the previous day.
» Store prepped product immediately into refrigeration (covered) upon completion of the prep.
