Bosc variety pears are identified by its long slender neck and its russeted yellow skin. Bosc pears have a distinctive juicy sweet flavor and crisp texture. California season is from August through October. Out of Washington, regular pears will be available from September- April. CA or “Controlled Atmosphere” product will be shipped for the balance of the shipping season.
Storage
» Store immediately in the coldest part of the walk-in cooler. Under-ripe pears may be stored at room temperatures to accelerate ripening.
» Store exposed product away from drafts from the cooler fan. Always keep in the original cartons or the original bags. Exposed pears will shrivel and rapidly dehydrate.
» Do not stack product on top of the cases or cause the pears to be crushed.
» Remove any pears with decay, damage or that begin to mold immediately.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Fresh pears have an expected shelf life of 6-7 days. Plan to rotate frequently to maintain maximum quality.
» Avoid placing pears on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
» Always limit the time the product is out of refrigeration.

Preparation
» Prepare as needed. Try not to use product from the previous day.
» Rinse pears thoroughly before use.
» Store prepared product in the refridgerator.
