Sugarsnap Peas

String-less Sugar Snap Peas are similar in appearance to regular pea pods, only smaller and are exclusively grown by Mann Packing. Color will be a pale green, but, slightly darker than a snow pea. Pods are plump, edible, string-less, sweet and crunchy.


Storage

» Store in the coldest area of the walk-in refrigerator. Kitchen heat will cause yellowing and the pea pods to lose their sweetness and flavor.
» Store in the original container to protect the product until prepped.
» Keep away from drafts from the cooler fan. sugarsnap peas are highly susceptible to dehydration.
» Keep sugarsnap peas away from moisture. Moisture on the surface promotes decay.
» sugarsnap peas are moderately susceptible to ethylene damage. Store away from ethylene producing fruits such as apples, avocados and melons where possible.

Handling
» Follow good rotation practices; first shipments received should be used first.
» The expected shelf life of sugarsnap peas is 4-5 days. Plan to rotate frequently to maintain quality.
»
Never place the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prepare as needed. Try not to use product from the previous day.
» Do not cut off the calyx with a knife. Calyx must be pulled to de-stem the pod.
» Sugarsnap peas are field packed. Rinse thoroughly prior to preparation.
» Store prepared product in refridgerator.
