Pea shoots or pea tenders are the tender new growth of a pea plant. Delicate tendrils and sweet-tasting pea-flavored leaves are just some of the phrases used to describe pea shoots. As the perfect multiuse plant, pea plants provide greens and then pods for great eating.


Storage

» Store in the coldest area of the walk-in refrigerator. Kitchen heat will cause yellowing and the pea pods to lose their sweetness and flavor.
» Store in the original container to protect the product until prepped.
» Keep away from drafts from the cooler fan. Pea tenders are highly susceptible to dehydration.
» Keep pea tenders away from moisture. Moisture on the surface promotes decay.

Handling
» Practice good rotation, first shipments received should be used first.
» The expected shelf life of pea tenders is 4-5 days. Plan to rotate frequently to maintain quality.
»
Never place the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prepare as needed. Try not to use product from the previous day.
» Pea tenders are field packed. Wash pea tenders for 1 minute (minimum) and drain well, immediately prior to preparation.
» Store prepped product immediately into refrigeration (covered) upon completion of the prep.
