The star fruit is also known as carambola. It is the fruit of the tree Averrhoa carambola, which is a native species of India, Indonesia and Sri Lanka, but is gaining popularity in the United States. The flavor of this fruit is a combination of the taste of plums, pineapples and lemons. However, some people find the star fruit taste which is similar to the mix of papaya fruit, orange and grapefruit. One can consume the star fruit entirely. It has a waxy skin which is green when raw and golden yellow when ripe.

Storage

» Store in the coldest area of the cooler, preferably in a dark area with good humidity.
» Store in the original container to protect. Do not stack heavy objects on top of cases to limit the potential of crushing.

Handling
» Follow good rotation practices, first shipments received should be used first.
» Shelf life should range from 5 – 7 days
» Handle with care, do not drop product
» Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.

Preparation
» Prep fresh daily as needed. Try not to carry over prepped product from the previous day
» Store prepped product immediately into refrigeration (covered) upon completion of the prep.
