Definitions
Read some of the produce industry definitions and information on illnesses that can occur from unhealthy produce.

Tomato Ripening Chart

Tomatoes 1. Green
The surface of the tomato is completely green in colour. The shade of green may vary from light to dark.
2. Breakers
There is a definite break in colour from green to tannish yellow, pink or red on not more than 10% of the surface.
3. Turning
More than 10% but not more than 30% of the surface, in the aggregate, shows a definite change in colour from green to tannish yellow, pink or red
Tomatoes 4. Pink
More than 30% but not more than 60% of the surface shows pink or red colour.
5. Light Red
More than 60% but not more than 90% of the surface shows pinkish-red or red.

6. Red

More than 90% of the surface shows red colour.
